Strawberry-Rhubarb Vegan Ice Cream
(serves 2)


Ingredients
1 fresh rhubarb stalk
2 cups frozen strawberries
1-2 tbsp. agave syrup
1/3 cup unsweetened almond milk
1/3 cup NutraCleanse™

Method
Chop rhubarb into chunks and place in Vitamix or other high-powered blender. Add the rest of the ingredients and process first on low, and then slowly turn to high. Using the wand (we like to call it a masher) that comes with your blender, mash food down into the blade while blender is processing. Continue until mixture is smooth and creamy. Scoop out of blender with a spoon into a bowl, and serve immediately.

Vanilla Chia Breakfast Pudding
(serves 2)


Ingredients
½ cup chia seeds, divided
2 ½ cups vanilla soy milk, divided
½ cup NutraCleanse™, divided

Method
Combine all ingredients in 2 mason jars until very well mixed. Set aside for 5 minutes, then stir again very well. Cover with plastic wrap and refrigerate overnight. In the morning, stir and eat! Super high-fiber breakfast.

Spring
Gazpacho
(serves 2)


Ingredients
3 medium tomatoes (preferably yellow), halved, seeded, and coarsely chopped
1 medium yellow bell pepper, coarsely chopped
½ large seedless cucumber, peeled and chopped
2 scallions, sliced
1 small garlic clove, minced
1 ½ tbsp. white wine vinegar
1 tbsp. olive oil
½ tsp. sea salt
¼ tsp. freshly ground pepper
½ cup NutraCleanse™

Method
Combine all ingredients except NutraCleanse™ in Vitamix or other high-powered blender, and blend until smooth. Keep in blender, cover, and refrigerate overnight. Before serving the next day, blend again for 20 seconds; thinning with up to ½ cup water to desired consistency. Add NutraCleanse™ and blend well one more time. Divide among 4 bowls and serve immediately!
