Plant Description

In Japan and Europe, burdock is cultivated as a root vegetable and frequently eaten in stews, soups, and stir-fries. Although being originally native to Europe and Northern Asia, it’s now widespread throughout the United States, where it grows as a weed and is not as revered as it is overseas.

Burdock has burrs that stick to clothing or animal fur. A member of the daisy family, it grows to a height of about 3 to 4 feet, and has purple flowers that bloom in the summer and early autumn. Burdock also has wavy, heart-shaped leaves that range in colour from green to white, and the roots, which are used medicinally in the east, are brownish green to almost black on the outside.

Burdock consists primarily of carbohydrates, volatile oils, plant sterols, tannins, and fatty oils. Researchers aren’t sure which active ingredients in burdock root are responsible for its healing properties. But the herb may have anti-inflammatory, antioxidant, and antibacterial effects.
